All of our stewing beef is diced chuck taken from the shoulder, widely considered the best cut for stewing beef. After just a couple of hours of slow cooking, you will have tender dish, with a deep flavour.

At Legges all of our beef is sourced from Herefordshire, from within a few miles of our shop. To ensure we source only beef of the highest quality, each week we individually select the best from a handful of local farmers whom we know and trust. We then hang our beef to mature for 28 days on the bone when our skilful butchers prepare each cut, delivering our celebrated succulent beef to your table.
In the pan, brown off some onion and garlic until lightly browned, and then transfer to the casserole dish. Add beef stock, red wine and garden herbs to flavour.
Place in a pre-heated oven at 150 degrees and cook with the lid on for approximately three hours until the steak is tender.
