Herefordshire Grass Fed Shin of Beef
Our Herefordshire beef shin makes for a great stew.
Being from a hard working area of the animal, this cut is perfect for braising and long, slow, cooking. Shin of beef offers deep and rich flavour as the beef breaks down and naturally tenderises while cooking.
As the fat renders, it enhances the succulent meat, and creates and unrivalled flavour for your accompanying gravy.
Season the diced shin with salt, pepper and flour and then fry off in a pan for a couple of minutes until golden brown. Transfer to a casserole dish.
Our grass fed Hereford beef comes from a small group of local farmers, chosen for their high animal welfare standards and commitment to sustainable farming.

At Legges all of our beef is sourced from Herefordshire, from within a few miles of our shop. To ensure we source only beef of the highest quality, each week we individually select the best from a handful of local farmers whom we know and trust. We then hang our beef to mature for 28 days on the bone when our skilful butchers prepare each cut, delivering our celebrated succulent beef to your table.
In the pan, brown off some onion and garlic until lightly browned, and then transfer to the casserole dish. Add beef stock, red wine and garden herbs to flavour.
Place in a pre-heated oven at 150 degrees and cook with the lid on for approximately six hours until the steak is tender.
