Herefordshire Grass Fed Rib of Beef

Considered by many the best of all roasting joints with perfect proportions of bone, lean meat and fat. Cooking the meat on the bone enhances the depth of flavour and provides for undoubtedly one of the finest joints of beef. A true centrepiece and perfect for any special occasion.
Our grass fed Hereford beef comes from a small group of local farmers, chosen for their high animal welfare standards and commitment to sustainable farming.
All of our Herefordshire beef is hung on the bone for at least four weeks, resulting in a sublime texture with a real depth of flavour.
The Rib of Beef will come chined and ready to put straight into the oven.
Each rib is approximately 1.5kg and serves two people.

All Nationwide consignments are made to order and vacuum packed. Orders are boxed with refrigerant pads to ensure that goods are kept cool throughout the journey.

At Legges all of our beef is sourced from Herefordshire, from within a few miles of our shop. To ensure we source only beef of the highest quality, each week we individually select the best from a handful of local farmers whom we know and trust. We then hang our beef to mature for 28 days on the bone when our skilful butchers prepare each cut, delivering our celebrated succulent beef to your table.
Take the Rib out of the fridge and bring up to room temperature before cooking.
Pop the rib into a roasting tin and put it into your oven at 220c for 15 minutes, until the outside is browned. This will seal the joint, ensuring that the flavour and moisture is retained during cooking.
Once browned, turn down the oven to 160oc and roast for 30 minutes per kg.
Once cooked, allow the join to rest for 20 – 30 minutes before serving.
