A real treat, the fillet is widely considered the King of all beef cuts, and there is no better time to celebrate it than at Christmas. Whether you are cooking on its own, making a Beef Wellington, or cutting into steaks, this really will not disappoint. The subtle flavour, and buttery texture, make this one of the finest cuts of beef you will have the pleasure of tasting.
It’s refined flavour and unbeatable tenderness shines through. A true centrepiece for any dining table, the fillet will not disappoint.
All of our Herefordshire beef is hung on the bone for at least four weeks, resulting in a sublime tender cut, with a real depth of flavour.

For Christmas Deliveries:
Nationwide Deliveries (those more than 10 miles from our Bromyard shop) will be dispatched on Monday 21st December for delivery on Tuesday 22nd December. These will be delivered by APC couriers. Local Deliveries (those within 10 miles of our Bromyard shop) will delivered, by Legges, on Tuesday 22nd or Wednesday 23rd December.
If your Christmas Order does not contain any fresh meat, then we may dispatch your order before the dates noted above. If you would like your Christmas order delivered beforehand, please contact us and we will do our best to accommodate.
At Legges all of our beef is sourced from Herefordshire, from within a few miles of our shop. To ensure we source only beef of the highest quality, each week we individually select the best from a handful of local farmers whom we know and trust. We then hang our beef to mature for 28 days on the bone when our skilful butchers prepare each cut, delivering our celebrated succulent beef to your table.
Before cooking, remove the fillet from the fridge and bring to room temperature.
Lightly season your fillet and place into the hot pan, to brown on all side. This will seal in the flavour.
Once the fillet is browned, transfer to preheated oven at 220c for approximately 20 minutes.
Remove from the oven and rest for 20 minutes.
