Herefordshire Grass Fed Sirloin Steak
A tender, lightly grained steak, with an edging of natural flavoursome fat. The sirloin is cut from the loin, for superior tenderness which combined with the natural flavour of the buttery fat makes it one of our favourites.
This Herefordshire sirloin is hung on the bone for at least four weeks, which combined with a subtle marbling, results this steak having a real depth and character of flavour.
Each steak is approximately 250g (8oz).

At Legges all of our beef is sourced from Herefordshire, from within a few miles of our shop. To ensure we source only beef of the highest quality, each week we individually select the best from a handful of local farmers whom we know and trust. We then hang our beef to mature for 28 days on the bone when our skilful butchers prepare each cut, delivering our celebrated succulent beef to your table.
Perfect served medium rare.
Remove the rib eye steak from the fridge and bring to room temperature before cooking.
Lightly season with salt and pepper and add to a hot cast iron pan. Cook for three minutes and then turn, cooking for a further thee minutes, until the juices appear.
For medium steak cook for four minutes on each side, and for well done six minutes.
Leave to rest before serving with a glass of red wine.
