Marinated, flame-kissed and packed with rich, succulent tenderness, it’s the ultimate centrepiece for alfresco dining… Serves: 4-6 | Prep time: 10 minutes + marinating | Cook time: 20-30 minutes Ingredients 2.7kg Herefordshire butterflied leg of lamb For your marinade: 250g Greek yoghurt 3 garlic cloves, grated 1 lemon, juiced 2tbsp olive oil 2tbsp fresh rosemary, finely chopped Salt and black pepper Method Begin by making your marinade. Combine the yoghurt, garlic, lemon juice, olive oil, rosemary, salt and pepper in a bowl. Rub generously over the lamb, ensuring it’s evenly coated. Cover and refrigerate for at least four hours, preferably overnight. (About 30 minutes before you’re ready to get cracking with dinner, take the joint out of the fridge to bring it up to room temperature.) To cook the lamb leg, preheat your BBQ or griddle pan to a high heat and grill it for around 8–10 minutes per side for a medium finish, depending on thickness.
