Highgrove Goose Fat - perfect for roast potatoes

For perfect roast potatoes:
Par boil the potatoes, drain well and fluff up. Add plenty of goose fat to a roasting tin and place in a pre-heated oven for approximately 10 minutes at 220oC. Once the fat is just smoking, carefully add the potato chunks. Baste well and place them in oven for approximately 45 minutes. Turn and baste occasionally to ensure they are golden and crucnhy all over.
