Our family of pies has grown so much over the last few years we thought in the spirit of Great British Pie Week we would give the low down on each one.
All of our cold eating pies are made in a delicious, traditional, hot water crust pastry handmade right down to the very last brush of the egg wash glaze to give them that golden glow.
1. THE OLD BOY - TRADITIONAL PORK
The Old Boy is our traditional, classic, pork pie but really it is not like a pork pie you will have tasted before .. it is a thing of tantilising greatness ! The pork comes from Julian Swifts herd of free range Pigs (check our instagram for pictures of the pigs in the fields !) and is prepared by the Butcher Boys who season it to perfection, giving it that delicious peppery flavour using a traditional recipe. It is then weighed into the hot water crust pastry where the Kitchen team lovingly prepare and cook it with their own fair hands right down to the last stroke of egg glaze to give it that golden glow that we all know & love!
2. THE PUBLICAN - STEAK & STILTON
Well well well the Publican, or the sell out should we call it, is the pie that you just can't resist at food festivals, no matter how many Publicans we bring they will always sell out .. you guys just can't get enough of it ! Beef from Neville Eckley's prized Hereford Beef Cattle bred at his farm in Munderfield, Herefordshire with Colston Basset Stilton that we also sell by the slice in the shop .. it really is a showstopper and one not to miss out !
3. THE FARMER - STEAK & CHEDDAR
Neville does it again with his prized beef cattle giving us delicious chuck steak which the kitchen then cook for 4 hours adding their own homemade chutney and Herefordshire chedar making 'The Farmer' the perfect ploughmand lunch all wrapped up in that delicious hot watercrust pastry !!
4. THE DUCHESS - CHICKEN & BACON
The Duchess is the lady of the family and doesn't she put on a show ! Free Range Chicken with our streaky bacon, stuffing and a hint of curry powder... an interesting mix you might think but she really does have it spot on its a must try, sell out, stunning pie that you will not regret!
5. THE RAMBLER - CHICKEN, SUNDRIED TOMATOES, APPLE & PAPRIKA
The Rambler, as the name might suggest, is the perfect picnic pie. The chicken, sundried tomatoes, apple & paprika make a light pie that isn't going to make you feel like you've overdone it once you've finished your lunch & your off walking again!
6. THE TOWN CRIER - PORK, VENISON & CHILLI JAM
Ah the Town Crier, well it really is a pie to shout about, the Town Crier himself made a rhyme to celebrate this very pie ! Its pork & venison are delicious, filling flavours and our homemade tomato & chilli jam complements the meat giving it a tasty heat- but don't worry it won't blow your socks off !
6. THE CELEBRITY - PORK, PERRY & PEAR
And here we have the newest addition to the family our Celebrity Pie. Made especially for John Craven when he did a piece on Legges for Countryfile this pie is a real taste of the country, Julians Free Range Pork, Tom Olivers Perry, Local Pears with nettles makes this pie a taste sensation, vouched for by John Craven himself!
